The watermelon rind or the white portion is mostly discarded, has a powerful antioxidant enzyme glutathione peroxidase. The rind also contains citrulline, an amino acid which helps in the production of nitric oxide, that dilates blood vessels and paves way for smoother blood flow, thus improving heart health.

Watermelon white portion chutney

INGREDIENTS
1 cup water melon white portion chopped
1 medium Tomato
1 tsp cooking oil
1 tbsp Urad Dal
3-5 dry red chillies
2 springs curryleaves
2-3 slices fresh ginger
1/4 cup coriander leaves chopped

Optional
1 tbsp Lemon juice
1 tbsp flax seeds or pumpkin seeds or watermelon

Method
To a heavy wok add oil and roast the urad day and the dry red chilli, till the dal turns golden brown and the red chillies crispy to a snap.

Add the chopped watermelon rind, chopped tomato, ginger and saute for about 5 minutes.

Sprinkle salt and cook for another two minutes

Take off the heat and add in the coriander leaves, seeds if any.

Cool and grind to a smooth paste. Enjoy with crispy dosa or soft steamed idly or with roti as a spread.
